What you are seeing here are 2 or 3 drops of water released from a height of around 12-15 inches.Each water droplet is released at different times(around 150ms between each release)and the first drop hits the water and creates the long tube of water effect(the bounce)and the second water drop hits the top of the first drop and creates the explosive effect.

The way water reacts no photo will ever be the same.

The colours come from different food colouring used in the bowl and the water droplets.
