It is all about profits. Let's not put the price up but get the public to buy less. If was metric there would not be packets reducing from 500g to 450g in the same sized box. Or like fluid packages 1L down to a stupid 864ml. Greed from manufacturers.
It's all about cost of production, actually. Shrinkflation allows suppliers to keep selling a product by burying the increasing cost in size changes. If the price goes up, we stop buying; if the size shrinks we don't notice.
There's also something I like to call 'bulkflation' which explains why the tubs that butter substitutes/spreads come in seem to get bigger every effing time you go to the supermarket. This is an indication of a failing economy of scale; we have to be sold bulk tubs in order for them to retain their economy of scale while we simultaneously buy less bread.
Both are different kinds of "boiling the frog".

The point of it is that when they increase the price after Christmas back to what it was for 12, it will still seem 'right' to most shoppers

OMG don't scare me like that!!! I even checked the date to make sure it wasn't April 1st!!! Oh the shock, the horror, the anxiety! I even considered asking for my medication to be increased! It ran through my mind that maybe North Korea had bombed the Jaffa Cake factory or the EU had banned them or something. Oh how would I function without them? Would I still be able to work? Would others? Would western civilisation collapse? Should I dig a bunker? If I tried to stock up would there be panic buying? Even civil unrest?
But Jaffa Cakes are still available? Right? Please say yes!!!

I can only assume it's purely to keep the price of a box under some price point that the marketing gurus have deemed optimum - either that or it's bowing to the healthy eating lobby

It's an interim move towards increasing the price. They will cost the same for 10 as previously 12 after Christmas offers and occasional buyers will find the box the same price.
In the short term the production costs will increase, the box and wrapping will cost the same to produce whether 10 or 12 are in it, so it doesn't make sense unless they have a plan to increase price.

It is just a masked form of shrinkflation, cushioning the sense that the box has less in it by manipulating the price. It's how PC World would do shrinkflation: temporary pricing illusions.
Either that or they are getting ready for a post-Brexit renegotiation of the famous VAT ruling ;)
