Join Mitchell's 16 minute long album track 'Paprika Plains'. I remember buying the Don Juan's Reckless Daughter double album some time back in the 1980's and being blown away by this track and the contrasting images of of the party/club where she is currently and her memories and reflections of the rural Canada of her childhood. It was like nothing I'd heard before.

Santana, Samba Pa Ti.
I have loved this since I was a teenager and it just never, ever gets old.
It's a supremely balanced, emotional piece of music, and a clear candidate for one of the greatest solos on any instrument of all time, but it has always fascinated me that the first transition point in this guitar instrumental, at 1:30 or so, is clearly a riff written on a guitar but played on a Hammond (B-3, I guess).
Because Carlos Santana never forgets he's in a band.

Woke up with tunes in my head and they've been through the usual chain of connections, and like they often do, have settled on this:
Gary Moore, great rock guitarist and eternal student, willingly taking his entire blues education over again from the overlooked genius Albert Collins. Outclassed and overjoyed about it.
