Holy crap what an awful experience to go through, don’t let them grind you down. Say nothing to fuel their toxic little lives/community and when you can, get out, move on. In the meantime smile, be polite, greet them with a cheery hello, good morning but have nothing to do with them, now or in the future. You are better than them.

If you omitted it off your work record and then they found out, it was right for them to ask for a reference as the most recent employer. I think them finding out that you tried to hide it made them suspicious hence asking for the reference
If you signed and returned the contract then I think legally you are due payment for the notice period, the length of which will be in the contract. Enforcing it may be fun though
Hopefully you’ll find a much better job and working environment soon. Anywhere would be lucky to have you

Yes I have all of my travel expereince on my cv as it was a travel management job and I didn't think pulling pints was relevant but I happily gave them the reference when they asked for it. Im gutted because I have been trying to get back into travel for ages and have a massive customer base already but it is a very catty industry (as you may well know from the tour operator days) I've had a interview for something else today and booked in a few shoots and a mini tour to tide me over xxxx
