Is it possible to get users that has logged in to explicitly accept/reject a booking instead of having it as Unconfirmed. Or at least make it more visible? Notifications sometimes doesn't work well when member has many notifications and it can easily get missed.

Just mention that they need to confirm the shoot in messages otherwise the shoot won't go ahead as it is unconfirmed. eg "I will send a notification that the shoot is booked. Please confirm this so that the Booking can go ahead." Never had an issue in nearly 13 years as a member.
I think there's a more general problem with notifications that need a response. For example, an image invitation to a group might not be anywhere near as important as a shoot proposal, but I believe it uses a similar mechanism for acceptance, and it will similarly get buried. I've already discussed that with Admin, and they agreed that it seemed like a problem, so had passed it to the Development team.
