As someone who values model safety, would it be possible for PP to remove the GPS data in the Exif on uploading, I know FB already do this.

Facebook strip virtually all Exif data. That would not be desirable here.
Lightroom even has an option for this on the export menu.

And on the other side, what if I actually want to include the GPS data, for interesting locations?

Sadly some people are unaware location information is stored on the Exif, I never suggested PP would be responsible I just suggested it could possibly be removed during upload, Just in case someone was either too lazy or had forgotten to remove it.
